Okay….am I the only one that ever feels this way?  We have been nutty-busy lately.  Matter of fact I am blogging from my phone…yet once again…because I need to head to town in  second.

I really need to figure out what we are eating tonight.  I’m thinking that no matter how yummy ice cream is….it’s not meant for a meal.

Do you guys have a go-to meal for times like these?  If it were winter I might throw on a pot of chili….but the Mr. doesn’t dig soup and chili in the summer.  I can understand that.

Sometimes on nights like this we have breakfast for supper.  I enjoy it. When I was a kid….I hated it!  Things change.  😉

Part of the reason for my dilema…is….I need to go grocery shopping.  Ahhh….now we know….what all this wee-wahhhing is about!  😉

Aren’t wedding showers fun? Good food…good friends…a chance to laugh your guts out.

If you are the person that gets the honor of throwing the shower, it’s so fun to decorate…because the whole time you have the guest of honor in mind. My sweet friend and fellow foodie Amanda threw this shower for our friend/cousin Danna.  I offered our place, along the dirt road, for the party shack.

The chicken salad recipe from mmmMonday! was for the shower.  If you missed that recipe…you can find it here.  It was delish, along with all of the other food that we had.  Of course…we HAD to have food.  I mean…what fun would that be…if we didn’t?  😉

You wanna hear something crazy?  The day before the wedding shower…our air went out on our main level.  Thank the good Lord that it’s still working upstairs, so we have somewhere to go and cool off.  (I’m waiting on the guy to come and fix it today.)  Our gals are troopers though.  We didn’t let a little stuffiness keep us from partying!

Saturday morning, it was quiet at the Farmhouse.  I had beans that needed breaking…matter of fact I have some waiting on me now…but I couldn’t resist some quiet shots before the shower.

Isn’t it exciting, getting together and celebrating with friends?  I love entertaining here.  We have a very kid-friendly farmhouse…so it’ all good…and we can just concentrate on having a good time.

mmmMonday! Sister T.’s Chicken Salad

Hey guys!  I hope that you had a wonderful weekend.  Welcome back!  As you know it’s mmmMonday!  I think that we might have talked about a chicken salad recipe before.  This one is just a tad different and something to be filed back that you will pull out…quite often!

Our pastor’s wife introduced me to this type of chicken salad years ago.  She is a whiz in the kitchen and I am very thankful for that.  Down through  the years she has been one of the “moms” that I have interrogated in the culinary department.  You know…when you are trying to make something…and you dial them up…and ask all of the ins and outs?  These gals were foodies before we ever knew what a foodie was.  They were just trying to feed their families the good stuff.

So without further ado….

 

Sister T.’s Chicken Salad

(This may or may not have been tweaked…by me…but this is the jist.  Also..I am not putting measurements…and I will explain that in a minute.)

chicken, cooked, cooled and diced

grapes, sliced

celery, chopped

onion, diced

pecans, chopped

mayo

seasoned salt

garlic powder

freshly cracked pepper

Directions:  Mix all ingredients in large bowl….stir and serve on rolls or with crackers. (Chilling and making a day ahead…is wonderful.  The flavors meld and make it yumalicious!)

Okay…I know that seems lacking…but this is the reason why.  You can make this in small batches or large.  You can use a whole, boiled chicken, deboned, or you can use boneless, skinless, chicken breasts.  Whatever you use…just eyeball it and add as much or as little as you want.  Also…for the seasonings…do the same.  Give it a few dashes of seasoned salt, garlic powder and pepper…and then taste.  😉 (A bunch.)

mmmMonday! Lemon Juice and Extra Virgin Olive Oil

Would you like to come and visit my happy place?  Well…one of them.  I have several actually…and one of them could involve stripey party straws and turquoise Ball jars…but that isn’t the one that I’m talking about on mmmMonday! today. By the way…I am not responsible for any mason jars or stripey straws that jump into this post today.  Okay…I am…but I know that it’s totally off subject…and I just can’t help myself.  I am rambling…but I’m crazy about the fact that Ball is celebrating with blue jars this year.  Okay…back on track.  Today on mmmMonday!…..my happy place of lemon juice and extra virgin olive oil.  It’s a beautiful thing.

A couple or three years ago…my friend Jenny introduced me to the beauty of lemon juice on salad.  I’m just talking…a simple drizzle of olive oil and squeezing a fresh lemon over the top.  It’s so bright.  So fresh and delicious. It’s also very healthy.

You may already do this.  I just wanted the folks that have not tried it…to know the beauty of the humble lemon.  We have used it to make lemonade over the years…we have used it to flavor fish and chicken and lots of other things but squeezing it over salad without making a fancy dressing?  I challenge you to try it.  Your favorite veggies…with a sprinkle of sea salt and a few twists of freshly cracked pepper….then a drizzle of oil and a splash of lemon juice?  Amazing.

mmmMonday! Leftovers, Laundry and Lugging

Hey Gang!  How was your weekend?  I’m hoping that it was good and relaxing. Ours was good.  A Friday night to relax, a Saturday of family time and a Sunday of worship and rest.  Good stuff.  So…all of that brings us back around to mmmMonday!  I’m so glad that you stopped by to join us.  Today we are talking leftovers…for tonight’s supper…me puttering around in the laundry room today and for those of you that follow me on Instagram…the lugging of the dresser from Friday.  Good stuff.  😉

Yesterday, while we were at church…I had a pork roast bubblin’ in the ol’ Crock Pot.  Then when we got home, (after a stop off at the grocery store for coleslaw…which ended up in a bunch of other stuff because we were all hungry) we had pulled pork.  It was pretty tasty, if I do say so myself.  That brings us to tonight’s mmmMonday! meal.  Our roast that I used was pretty good sized…so there is plenty left for tonight’s PORK TACOS!  Do you love ’em?  We do. The Mr. and I were laughing this weekend about the quantity of Mexican food that we eat.  We never tire of it.  Pass the chips and salsa please.

Our pork tacos tonight will be pretty basic.  Flour tortillas, pork, sour cream, lettuce, tomato, onion and cilantro.  I like to whip up a little sour cream with lime juice…but the kiddie-poos aren’t too crazy about that.  Oh…and cheese!  How could I forget the cheese?  Tonight it will be a little mixture of cheddar and mozzarella…just cause that is what I have on hand.  We also have one last jar of last year’s homemade salsa that we are working on.  I am very pleased that we had enough to give away and to last us through the winter.  (Lord, please bless those tomato plants this year too. Okay…yes…I pray for our garden…and just maybe…last year I could be seen walking along the tomato plants…praying for them.  “Ask and ye shall receive.”) 😉

So…I’m thinking about puttering around out in the laundry room today.  I have a large metal rack out there…that things tend to pile up on.  I’m wanting to revamp it a tad.  I see all of these beautiful laundry rooms on our favorite Pinterest.  Also…I never have made my coffee sack curtains.  I may have to get on that too.  After I made our drop cloth drapes…my poor little sewing machine tried to give up the ghost.  I may see if the Mr. will oil her tonight and give her a tune up.  I love our laundry room.  It’s a good thing…I spend a big part of my life there.

Okay…okay…the lugging.  If you follow me on Instagram…you probably remember the dresser that I was going to lug from one side of the family room to the other.  Well…it’s done.  One of my new…super sweet IG friends also emailed a printable to me and it’s framed and I’m displaying it on the dresser for now.  I love it.  Thank you, sweet friend.  Don’t you love Instagram?  I do.  I have “met” so many neat people on there.  One friend and I found that we have a common love for fall décor.  We think that it’s fine that we are already stoked to decorate with pumpkins this year.  😉  Anyway…if you don’t follow me already…I am….yep…you guessed it, Along the Dirt Road.  Come and join in on the fun!

mmmMonday! Garlic Roasted Cauliflower

Hello!  There you are!  Bright-eyed and bushy-tailed?  Yeah…I’m having to work on that one too.  I hope that you all had a wonderful weekend.  We had a family get together on Saturday.  It was good.  It was also very interesting.  We all tried turduckin for the first time.  Have you heard of it?  A turkey, stuffed with a duck and a chicken.  It’s also stuffed with rice and seasoned up wonderfully…down in New Orleans.  It was very good.  It was a very special day…filled with lots of laughter. One of those days that makes thankfulness well up within your heart.

Sooooo…..onto the cauliflower!  Have you heard of it?  Have you seen it all over Pinterest?  Maybe you have already made it!  If so…then I won’t have to try to sell you on it.  I got a wild hair the other day and made it for the kids and I to munch.  It was all gone…quickly!  This has got to be my favorite way to make cauliflower of all time. What is it about roasting veggies in the oven that makes such a transformation in flavor?

As I do at times, I actually kinda toodled around on Pinterest and then combined a few things that I learned.  I do that.  I try new recipes and then tweak them a tad.  Sorry folks…I guess I have to blaze my own trail.  😉

GARLIC ROASTED CAULIFLOWER

…Whatcha need:

1 head of cauliflower

extra virgin olive oil

fresh garlic cloves

sea salt

freshly ground pepper

…How ya do it:

Preheat oven to 425 degrees.  While you oven is preheating, wash your cauliflower and remove the stalk.  The cut it or break it off into pieces.  Put in a large bowl that will give you plenty of room for tossing.  Peel and mince your fresh garlic and add to the cauliflower.  Drizzle with olive oil and add sea salt and freshly ground pepper.  With a large spoon toss to coat.  Place cauliflower on a baking sheet and roast in oven for thirty minutes…or longer if desired.  YUM!

I didn’t give measurements for the garlic, olive oil and salt and pepper.  To me…those things are a personal preference.  I like lots of garlic…but you may not.  Same with salt and pepper.  Eyeball it…and knock yourself out.  (Not really.)

My Friends!  How are you?  I hope that your weekend and your Monday was great!  We have still been busy…but hopefully…things will slow down a bit now.

So…since I didn’t get a recipe or something in the foodie department posted yesterday, we are going to celebrate mmmMonday! on Tuesday.  Okay with you?  I didn’t think that you would mind.  You are great like that.

I’m going to tell you a little story:

Once upon a time there was a mother that would hold up a “naked” whole chicken and sing and make the chicken dance.  Her children would laugh with glee while the mother made the chicken play the air guitar.( It’s little wings looked so cute…strumming away.) The mother and the children then dubbed that certain dish Dancing Chicken.  The End.

How did you like it?  I know…it’s a little insane…but insane is fun, right?  I knew that you would agree.

Would you like for me to share my treasured recipe?  It’s delish.  It came out of the Rival cook book…that came with my first Crock-Pot.  There I was, a blushing bride of eighteen, with a new Crock Pot. (Be ready for an adventure…my Mr.)

It is not called Dancing Chicken.  The real name is Lemon Herbed Roasted Chicken.  How boring.  Yummy…yet with a boring name.  How sad.  I took care of that.  😉

Dancing Chicken    (Lemon Herbed Roasted Chicken…thank you…folks at Rival.)

3 to 4 lb. fryer or roasting chicken

1/4 c. chopped onion

2 tbsp. butter

Juice of one lemon

1/2 tsp. salt

1 tbsp. fresh parsley (or 1 tsp. dried parsley flakes)

1/4 tsp. thyme

1/4 tsp. paprika

(I add a little garlic salt too.)

Rinse chicken well and pat dry; remove any excess fat.  Place onion in the cavity of the chicken and rub the skin with butter or margarine. (Butter…always REAL butter.)  Place chicken in Crock-Pot.  Squeeze the juice of the lemon over the chicken and sprinkle with remaining seasonings.  Cover and cook on Low setting 8 to 10 hours.

This chicken is so tender, juicy and yummy that it will make you want to slap your momma.  Unless she is the kind that slaps back.  (Ozarkian mothers would slap back…we don’t really slap our moms here.)

Did you party it up big on Mother’s Day?  We really did.  Between what we did here in our own little family and getting together with the moms and our Sunday morning church service…we partied hearty for Mother’s Day. I hope that it was a good day for all of you.

So….we are back to mmmMonday!  You know…I contemplated not blogging this week.  Please don’t cry.  (I kid…I kid.)  This week is just so crazy-busy for us.  Is the merry (crazy) month of may like that for you all?  We have three graduations to attend this week.  It’s exciting and “whew” all at the same time.  We are also having our annual fellowship meeting at church this week.  Whew…whew.  School also gets out so…throw a few award ceremonies and end of the year activities.  Whew…whew…whew.

Anyway…I didn’t want to leave you hanging.  We are friends, right?  Right.  We talk foodie things on mmmMonday…so that is what we are going to do.  We are going to herb it up a little.

Are you guys crazy about herbs?  I. am.  I have been for years and years.  I am crazy about their color, shape, texture and smell.  I think that I have even shown you pictures of my little herb bed out back.  I actually started out growing them when we lived in town.  My first little lavender plant grew by our front porch steps.  I would go out side and rub the leaves and then smell my hand.  Very….therapeutic.

Do you love to cook with fresh herbs?  In my little herb bed…there is dill weed…just waiting to hop into my summer pickles.  Sometimes I run out there for a sprig of oregano for a sauce or I grab a few chives for a topping of some sort.  I don’t use the spearmint much…and it is really fortunate that I let it stay.  The only reason is…the Mr. and I love the smell.  When he uses the weed eater out there…it smells wonderful.  Spearmint is very invasive though…you have to keep it in it’s boundaries…or it takes over.  I’m talking…growing up through your kitchen floor.  (No…not really. Why did I say that? Just making sure that you are paying attention.)  😉

When we were younger and before we had kids…we were house hunting.  We looked at this house that had a wonderful (overgrown) herb bed.  Herbs appeal to the side of me that kicks off my shoes and runs barefoot with the kids through the grass.  (Am I a hippie at heart?  I was born in the late seventies. Hmmmm……) They just seem wild and free.  They aren’t only pretty but they serve a purpose.  I love that.

I have a friend named Pat.  She is very passionate about herbs.  When we start talking about them…we are both in the zone.  Isn’t it fun to have a variety of friendships like that?  With each person it is something different that you connect over.  God is good…to put things into motion like He does.

Whether you like to cook with herbs or just look at them…they are a wonderful addition to your yard.  They are also lovely as a little cut arrangement to grace your counter.  I love that.  They stay green and perked up in water for days. One of the hashtags on my Instagram is #greenmakesmehappy. (If you want to join us on Instagram…we are alongthedirtroad)  Truly…there is something about all of this green around us…that God created…that does a special work down deep in my soul.  Seeing the creation…kindles worship in me…for the Creator.

mmmMonday! Is your burger better?

It’s mmmMonday! Dirt Road people.  I hope that you had a fantab weekend and that you are ready to talk food.  We are gonna jaw about burgers a bit today.  We all love burgers right?  I thought so.

Hamburgers are one of my all time faves.  I rarely ever get tired of them.  I grew up eating my mom’s pan-fried version.  She would cook them and then steam the buns.  Ahhhhh…..a tiny slice of Heaven on earth.  My MIL cooks her burgers the same way…and my kids want my husband to fry our burgers here at home…because he makes them like Mamaw.  (He can also grill a mean burger.)

Now days when we make burgers in the house we use an iron skillet.  I just love the way that they turn out.  The even heat makes a world of difference to me.  (I kinda have a “thang” for iron skillets…anyway.) I like my burger a little on the “done” side…and the iron skillet is perfect for this.

I’m wondering how you feel about toppings?  Are you a mustard and ketchup kind of person?  Do you love a burger dripping with mayo?  Would you like to know my absolute favorite topping on a burger?  It’s avocado.  I LOVE avocado on my burger and I have for quite some time.  I also love a big ol’ hunk of onion on my burger. ( Pass me a Cert please.)  I am patiently waiting for the garden tomatoes to add to my list of veggies that I pile on my burger.  Mmmm…..you can’t beat that.

When you think about it, hamburgers are such a simple food….and yet Google says that Americans as a whole consume 13 BILLION hamburgers in a year.  The average American eats one hundred hamburgers a year and that figures out to a fourth of a burger every day.  Wowza!  We are a burger eating people. (RV…that was for you.)
