Would you like to come and visit my happy place? Well…one of them. I have several actually…and one of them could involve stripey party straws and turquoise Ball jars…but that isn’t the one that I’m talking about on mmmMonday! today. By the way…I am not responsible for any mason jars or stripey straws that jump into this post today. Okay…I am…but I know that it’s totally off subject…and I just can’t help myself. I am rambling…but I’m crazy about the fact that Ball is celebrating with blue jars this year. Okay…back on track. Today on mmmMonday!…..my happy place of lemon juice and extra virgin olive oil. It’s a beautiful thing.
A couple or three years ago…my friend Jenny introduced me to the beauty of lemon juice on salad. I’m just talking…a simple drizzle of olive oil and squeezing a fresh lemon over the top. It’s so bright. So fresh and delicious. It’s also very healthy.
You may already do this. I just wanted the folks that have not tried it…to know the beauty of the humble lemon. We have used it to make lemonade over the years…we have used it to flavor fish and chicken and lots of other things but squeezing it over salad without making a fancy dressing? I challenge you to try it. Your favorite veggies…with a sprinkle of sea salt and a few twists of freshly cracked pepper….then a drizzle of oil and a splash of lemon juice? Amazing.

Hi Kelli, this is my first comment – but I have been loving your blog for awhile now. We use lemon juice, EVOO and a pinch of garlic (along with salt and pepper)…my mother-in-law was from Italy and this was the only “dressing” allowed on salad! It’s also great to dip crusty bread in – don’t let what is left in the bottom of the bowl go to waste! Love your dirt road viewpoint (I’m down the road in Joplin)!

I love Good Seasons Italian dressing that you mix up. My trick is to use rice vinegar instead of white vinegar. It’s awesome. Now, wanna hear something funny?! 😉 I didn’t really want to try the lemon juice and olive oil until the other lady commented what she did about it being “the ‘only’ salad dressing in Italy!” LOL 😄 Hey, if I can’t GO to Italy I can at least eat like the Italians really do! Haahaa!!
