mmmMonday! Freezing/Preserving 101

Yes.  You guessed it.  I did not can the pears.  I did not make pear butter or pear jam or pear jelly.  I might do some of that later, but not this time.  By the way…welcome to mmmMonday!  (Just thought that I would throw that in.)  What I did do, or what WE did do, was freeze them.  I’m going to tell you how we did it.

First of all the pear story is this:  My Paw Paw and Uncle Jay…picked close to eighty pounds of pears.  Yes…that is right.  I had planned to can them…but the process was a tad more lengthy and we were in revival last week at our church AND that was just a lot of pears to process. So…after tossing it around with my Auntie Lynne’s opinion mixed in…freezing became the best option.  When you freeze your fruit…then later when you have more time, you can do the jam, jelly, pear butter or cobblers and crisps.

Enter:  The Mr.’s mother…a.k.a. The MIL.

She called on the particular day that I was planning on making this happen in our farmhouse kitchen.  She was asking if I had made pear butter yet.  I then proceeded to ask her if she wanted to come over and peel pears with me that after noon.  She said “Yes.” Woot woot!.  I know that I sound desperate, but some of the pears already smelled a tad a lot on the fermented side.  Time was ticking. So, we peeled pears all afternoon and talked and laughed and drank pop (We don’t call it soda.) and both walked away with an injury.  She had a little knot where her knife was bumping her index finger…and mine had a small bruise.  We are peeling machines, let me tell ya.  We even had a peeler…but like the women of years gone by…it was much more enjoyable to do our work with a knife in hand and our jaws flapping. I can’t believe that we didn’t take pictures.  I guess we were too busy and pressed for time.  As Sweet Brown would say…”Ain’t nobody got time for that.”

The process is so simple for freezing that I can tell you in a few simple steps.

1.  Wash your fruit and peel and core it.

2.  Chunk or dice the fruit.

3. Dice it into a mixture of water, lemon juice and salt. (1 quart of water, 1 tsp. each of lemon juice and salt. I did 2 quarts in each bowl.)

4.  After you have soaked all of your pears, drain and put into freezer bags.  Remove air and lay flat for freezing.

That is pretty much it, Dirt Roaders.  I’m not sure what all I will make later on with my pears…but freezing is a great way to preserve the fruits of the season when done right.  Especially when you need to get it put up fast so they don’t ruin.

mmmMonday! Fruits of the Season

“Can she bake a cherry pie, Billy boy…Billy Boy?  Can she bake a cherry pie, charming Billy?”  Isn’t that the way that it goes?  I believe so.

How in the world are you, Dirt Roaders?  We are doing good. No cherry pies today….it’s not really the season for fresh cherries…but other things are coming along.  We are plugging along into the cooler weather, which is such a relief.  The Mr. loves fall and it makes me happy that the season that he loves is upon us.  That brings us to our little topic today…fruits of the season.  This mmmMonday! had me wondering if any of you out there that are making apple butter or pear butter…or just canning the fruit?  My Paw Paw and my Uncle Jay are supposed to be out picking pears for me today.  I am excited about that.  It’s been a couple of years since I have worked up a mess of pears. (That is the way that we describe it…in the Ozarks.)

We have had cozy weather over the weekend.  Maybe...just maybe fall is on the way.

The last time that we had pears I made pear butter.  Actually…I roped the Mr. into helping me.  It was a very involved process and I felt like I needed four hands instead of two.  It was delish!  If you are interested in the recipe it is in the Ball Blue Book and I’m sure that if you Google it…it’s all over the web. I love the little bit of orange juice that you add.  It’s so good at breakfast with eggs and bacon.

These give a little farmhouse/industrial/farmers market feel.  That makes me happy...in the nest fluffin' department.  ;)

I hope that your day is wonderful.  I hope that if you are up to your elbows in the fruits of the season…that it’s making you feel content and fulfilled.  Putting things up for your family to enjoy in the winter or all year long is a labor of love and it is so worth it.

Betsey, My Favorite Pumpkin and the Joy of Cooking

Did I introduce you to Betsey?  Yes…I did in a quick post the other day.  In case you missed it,  Betsey is my version of the cow head on the wall thing that people are doing.  I love it!  Have you seen it?  Miss Mustard Seed has one and has made it very popular.  I love her.  Don’t you?  Anyway…one day I was a a yard sale and I found Betsey.  She was lying there on the table….(Can one lay down if one is only a head?)….and it dawned “uponst” me….that I could have my own version of a cow head on the wall…for a smidge of the price.  Now…that is not to say…that I wouldn’t love to have a big one…but for now…Betsey will do just fine.  I am sad to say that I do not have a before picture, so get your imagination up and running.  She used to be white with golden, glowing eyes.  I believe that in her former life…she was a towel holder or something.  Now she is just beautiful….watching me cook.  (Btw:  That is my very own preserved Boxwood.  You can do it!) Betsey is a doll…in her espresso makeover. The other post about Betsey were pictures from my phone.  We will call this Betsey’s glamour shot.  😉

So now onto my favorite pumpkin.  I’m just throwing this in because it’s almost fall. The pumpkin, I’m thinkin’, was marked down last year because it was getting close to Christmas.  I love it.  It’s my favorite fake pumpkin of all time.  Now the little bowl has a chip…so I got it at TJ Maxx (another fave!) for a song. (No…I didn’t sing and dance…but I would have…if they had asked.) It was a very thrifty price.

Last but not least….the Joy of Cooking.  I found this little blue beauty at a yard sale the other day.  I was in love.  The color.  The popularity of this book.  The grease splatters from the woman that owned it for years.  The notes left inside.  The history of this cookbook.  All of it.  It was so worth the two dollars.  I believe that this one is a third edition.  There is something about old books that just grab me.

I don’t want to let you go without mentioning what today is.  In my quiet time this morning, I thanked the Lord for keeping us safe since the dreadful day, twelve years ago.  I was expecting our second child and it was a  very scary and sad time.  My heart goes out to those…that will never recover from that dreadful day.  Not fully anyway.  There are so many that lost so much and I pray that today they are comforted by those that care and hold them up in prayer. I am also very thankful for those that have fought this battle.  I don’t ever want to take for granted those that serve to make this country what it is.

mmmMonday! What’s for supper in your neck of the woods?

Do you all do that whole week meal planning thing?  I really want to know.  I think that it’s grand.  I am not that way.  I am more of a day before meal planner.  When I go to the store I buy basic ingredients that I can turn into all kinds of things.  I’m always wanting to know what people are having for supper.  After all…that is our big meal together at the Farmhouse.  We even have a little fb page called What’s for Supper?  Nosey aren’t I?  😉

I follow one person on Instagram that does the month of freezer meals.  Isn’t that awesome!?  That would save so much time.  I actually know a lady, that works with my husband, that used to cook all weekend to have food ready for the next week.  What an organized thing to do!

I have to have a little flexibility in my routine.  With both of the above ideas…you could do just that, just in case one night in the week you felt like celebrating and going out for pizza or something.  (The Mr. is probably nodding while reading this.  I am known for my spur-of-the-moment ideas. Hey…it makes life fun.)

I really do want to know what is for supper at your house.  Or….at your cabin…in your neck of the woods.  I love to hear about families sitting down and sharing a meal together.  It’s a wonderful thing.  Tonight…along the dirt road we are having roast.  In fact, here in just a bit, I’m going to go in the kitchen and put it on.  That’s what you do with a roast right?  “Put it on.”  Well…that is what my family tree of gals have always said.

I love preparing for my family.  I love it when I pick the kids up and they ask what we are having for supper.  Most of the time…it’s positive feedback.  You know how that works.  They all like roast though…so I think that they will be pleased.

Hey Guys!  How was your long weekend?  Our was fantab.  We celebrated a birthday and made lots of fun and one not so fun memory.  (We hit a deer.  Not so fun.)  Anyway…all in all it was great.  I had plenty of time to count my blessings and that is what makes me the happiest.

Soooooooooooooooo….that brings me to this.  Chicken.  Do you love it?  Do you hate it?  What do you do with it?  This is my dilemma today. I have, said chicky.  I don’t even have to go to the store for, said chicky.  I just don’t know what to do with….yes, you guessed it, said chicky.  😉

What I have are chicken tenders.  Maybe I will butterfly them and just cook them in a little olive oil and add a dash of sea salt and cracked pepper.  I also have a really good lemon pepper that I love.  I love it so much…I could burn my family out on it.  I’m trying to hold back. We may just have that and some lightish sides to go with it.  I’m so glad that we had this talk.  You guys are great and helped me out so much.  

I hope that your mmmMonday! on Tuesday is treating you right.  You deserve it!  After all…you are Dirt Roaders. 😉

A Little Organization

Today…..I went through my baking cabinet.  You know, the one that holds all of the sprinkles and flavorings and seasonings.  It made me excited.  It made me dream about days of baking Christmas goodies and party food.

Days that I clean out the cabinets and the pantry…and even the fridge….I feel very blessed.  I feel like I’m doing a good thing…just organizing what we already have.  I’m not at the store piling more and more in my cart…I’m just looking through what has already be given by the Provider.

This is such a simple post today.  No big project…which is not surprising.  Our life, while we have some of those now and then, is really about being inspired by what you have already been blessed with.

First...I have to rip everything out. (And throw out the stuff that is 76 years old.) ;)

I am thankful to be the type of person that gets joy out of these things.  Now that’s not to say that I don’t love to shop now and then.  I also love to go junking…which you already knew.  I just find contentment at times in telling myself “Nah…I don’t need more of that…I already have enough at home.”  I have to have a healthy balance or I start feeling overwhelmed.

This is me...in January.

On a little organizational note:  Have you tried storing your cornstarch, baking soda and baking powder in wide mouth canning jars?  It’s amazing.  Perfect for scooping.  Just be sure and label the tops.  😉

mmmMonday! Thrifty Soup

Hey there…Dirt Roaders!  Are you ready for another mmmMonday!?  I have learned that there are two types of people:  Those that love Monday and those that do not love Monday.  Whatever the case may be for you, I’m here today with a little recipe that is bound to make your mmmMonday! a little easier…if you choose to make it next week.  (Or the week after…or the week after that.)  😉

Last mmmMonday!  our kitchen was in the process of being “beadboarded.”  I needed something quick and easy as far as serving and clean up.  I had saved some taco meat in the freezer the previous week and decided to use that for a base in a soup.  I also asked my family first about making soup that day…because I tend to burn them out on it and it is still pretty (very) warm here…again. (My name is Kelli…and I am addicted to soup.) My Mr. is not a fan of big ol’ pots of bubbling soup and chili when it’s hot outside.  I respect that.  😉

That being said…we haven’t had soup ALL summer.  I was really itching for a bowl.  Sooooo…..I used what I had at home and came up with this.  I may have even said a prayer or two…hoping that the good Lord would bless my concoction so that it would be a keeper.  Guess what?  It was!  I am sooo thankful!  It won a coveted spot in my recipe journal.  That is where the keepers go.  I will be making this again.  Our teen even said “This is seriously….like the best soup that I have ever had.” Um….WOW!

So…without further ado….and you guys know how I roll, a dash of this and a sprinkle of that….here is the recipe for………(drum roll please)……….

Thrifty Soup

leftover taco meat (that has been seasoned with taco seasoning)

1/2 head of cabbage, chopped

1/2 onion, chopped

2 medium zucchini, chopped

2 cans of  tomatoes

2 tsp. minced garlic

1 potato, diced

2 tsp. beef base

1 can of cream of mushroom

salt and pepper to taste

1 can of tomato paste

Put all ingredients in Crock Pot and let it simmer….deliciously all day long.

I cannot stress to you…just how yummy this was.  We ate it with saltines…to save time and clean up….but cornbread would be amazing too.  You can add as many or  few cans of tomatoes as you want.  You could add different veggies or beans also. We also grated some fresh Parmesan on ours.  DEE-LIGHTFUL!  So, the next time that you have a dab of taco meat leftover…don’t pitch it.  Put it in a freezer bag….until you are ready for a soup day.  You won’t be sorry, Dirt Roaders. Thrifty Soup….is the soup of your dreams.  😉

Kitchen Backsplash: The After

Hey all!  Hope that Thursday is being kind.  It’s my favorite…you know.  😉  So…today I am going to share the end result with you.  Or is it just the beginning?  The beginning of a kitchen that I am in love with and the beginning of more home cooked goodness.  I like it that way.  Let’s call it a new beginning.

I love having a handy-dandy Mr. I love it that even though he might not always see my vision, until I show him pictures, that he trusts my instincts…and jumps right into the boat with me.  Especially when I say….“This is what I would like for my birthday.”  I have learned that if I will be patient…my birthday will roll around again and again. (Thankfully.) It’s also so fun that he has his dad to work by his side.  After all…two mathmaticians are better than one.  (He gets that handy-dandy gene from his dad.  I am so thankful that Papaw passed it on.)

I cannot stress enough, just how pleased that I am with our new backsplash.  It added the amazing bit of “farmhousey” that I was longing for.  It was actually a very frugal way to add a backsplash and it was exactly what I wanted.  You cannot beat that.

The crazy thing is, I wasn’t even aware that it was the thing to do.  I know.  I’m late to yet another party.  One night when I couldn’t sleep, I thought to look on Pinterest for beadboard backsplash.  I then blew up my followers feed with picture after picture of that very thing.  I was smitten.  Plus I had the pictures to show my Mr. Then the big moment came.  I realized that my favorite blogger kitchen of all time had a similar thing going on.  Have you ever read For the Love of a House blog?  She has amazing taste.  She also has the multiple jars that you see in our kitchen. I have seen it pinned multiple times.  So you know that others are crazy about it.  I love it.  Their home is beautiful inside and out.  Is that called a blog crush?  I’m thinkin’ so.  🙂

I hope that you have been inspired today Dirt Roaders.  You know…once you find the style that fits you…there are endless possibilities.  Usually there is a thrifty way to do what you would love.  Don’t be afraid to try.  You will like it…and you just might love it. Kitchen Backsplash: The Before

You have been in my kitchen, many times.  Well…not really.  Some of you have…really…but you know what I mean.  You have seen it.  You have heard me wee-wah about not knowing if I should go with all white or stick with the Russet Rose.  You have heard me tell recently…that I have compromised for now and settled for a beadboard backsplash and leaving the Russet Rose everywhere else.  I’m good with that.  I’m a colorful person.  I’m just not ready to totally give up my color.  So today…I’m gonna share a few shots of what the Farmhouse kitchen looks like…now…before we start our new project.

I love my kitchen.  They (whomever that is) say that the kitchen is the heart of the home.  It must be…because whenever we have company, that is the first room that the gravitate to.  I love that.  Our kitchen just feels like us.  We were blessed to build this home from the cow pasture up…so we drew our floor plan on paper and went from there.

Do you love your kitchen?  If you don’t…there are all kinds of things that you can do to change it…that are very inexpensive.  In the house that we lived in before this one (that we bought from the Mr.’s parents) we had red cabinets and black and white checked flooring.  I’m talking…the big black and white squares.  I loved it.  That linoleum was beautiful…all.the.time.  It had a glossy finish that was amazing.  My MIL is quite snazzy that way.  Paint is a wonderfully (thrifty) way to change the whole look of your kitchen.

Of all of the magazine pictures and Pinterest photos that I drool the most over….it’s the kitchen shots.  What is it with that?  Maybe it’s because I love to cook.  It just feels cozy in the kitchen.  I told the Mr., just last night…that I couldn’t wait to set our old kitchen scale on the counter, after the beadboard was up.  He smiled.  He knows me.  He also knows that the scale has been in our marriage…since the mobile home days.  Now there was a kitchen!  😉

Would you like to hear a confession?  We have Formica.  Are you shocked?  I know…I know…it’s a bad word in Blogland.  I’m just being honest with you.  I see beautiful counter tops of butcher block and soapstone and granite and marble and they are beautiful.  Someday…who knows?  Right now…ours remind me of two “kids” trying to build a home with two little girls and a little boy in their future.  They remind me of going to the cabinet place and picking out a color and then calling back and picking the lighter color…because I couldn’t live with chocolate brown leaf pattern.  They are staying…for now.  I’m a little bit in love with them…and their light leafyness.  😉

I am sentimental.  I have passed it onto our son.  We can’t change much in his room.  I’m okay with that.  I think that it’s a good thing to treasure what you already have…instead of wanting more.  After all…these are just borrowed things.  Blessings for…this time… to enjoy…and not nearly as important as the treasures that are being laid up for our future.

mmmMonday! Here a Pepper…There a Pepper…

Hey Friends!  Happy mmmMonday!  I hope that you had a good weekend.  We did.  Lots of refreshing and that was what was needed.  My husband might disagree with that…because he was needing to mow and didn’t get to…and it was getting on his one last good nerve.  It’s been so rainy here…you almost have to watch the sky and then run out and mow when you can.  Rain is good though…and that brings us to our point today.  It’s time to do a little canning around the Farmhouse…because we are getting overloaded with veggies from the garden.

You know…I’m writing this post in the wee hours of the morning, for one because I couldn’t sleep and secondly…because when the day gets started…I’m going to be in the kitchen, working.  So because of that, I don’t have pictures of today’s canning process.  I will have to save those for another post.  You will wait…right?  I knew that you would.  You are kind like that.  😉

I’m planning on searching the internet for a good, pickled banana pepper recipe.  They are doing really good this year.  So are the cukes and the squash.  Some years I have made lots of pickles and some years I have pickled squash and green tomatoes.  This year…the only thing that I have pickled were beets.  Our summer has been fast and crazy this year.  Mainly, we have given veggies away.  That is okay.  That is even more rewarding than putting it up for yourself.

Are you crazy about canning?  Canning is work, isn’t it?  It’s something that has been passed down to me and I love it.  It’s so satisfying when you hear those jars sealing.  I love seeing my hard work in those pretty jars.  There is something very humble, yet proud, in a long row of canned veggies.  A good kind of proud.  Maybe it’s more of a thankfulness that rises up inside.  Thankful to God for the harvest and thankful that you are able to put something away for your family to have in the future.  My sweet family, they cheer me on with the canning.  That makes it all worth while.  I hope that our girls pick this up and enjoy the busyness in their own kitchens someday.
