You guys!  I am still here!  Lol!  Thank you to those of you that have been here…even when I have not.  I have been under the weather a bit and honestly have not felt like doing much.  After a trip to my Chiro…I hope to be on the road again.  This getting older stuff is hard work!

I feel like I haven’t really gotten into gear with summer yet.  Our weather has been cool and rainy, sooo…spring has been long.  That isn’t a bad thing though.  We will miss this cooler weather about August.

I will leave you with a picture of this pretty Caprese salad today.  My husband picked up lemon basil for the herb bed this year and it is so bright in this salad. Such a fun time of year…when lunch can be picked out in the yard!!!

What relaxes you?  A few days away?  A bubble bath?  A stroll through an antique store? A good book and an old quilt? All of the above?

Whatever it is…..it’s the weekend.  Take some time apart for you.  God approves of rest and happiness for our bodies.  He knows that this world can be crazy and hectic.  He loves us…..and wants us…..to love us too.  How do I know?  It’s all in His word.

We have had a crazy few months at The Farmhouse.  Some of the things that keep me sane are God’s word and little mini vacations.  A few minutes with my arms around my husband and children or a laugh with a friend.  These are little moments of goodness that keep us going. They are gifts from the Creator…when we are dealing with cancer in our loved ones or hospital stays or financial troubles.

Life is full of hard things….but it’s also full of wonderful things too.  We all go through hard times….but we need to remember to look around…and to take the time to relax and enjoy.

My Friends!  How are you?  I hope that your weekend and your Monday was great!  We have still been busy…but hopefully…things will slow down a bit now.

So…since I didn’t get a recipe or something in the foodie department posted yesterday, we are going to celebrate mmmMonday! on Tuesday.  Okay with you?  I didn’t think that you would mind.  You are great like that.

I’m going to tell you a little story:

Once upon a time there was a mother that would hold up a “naked” whole chicken and sing and make the chicken dance.  Her children would laugh with glee while the mother made the chicken play the air guitar.( It’s little wings looked so cute…strumming away.) The mother and the children then dubbed that certain dish Dancing Chicken.  The End.

How did you like it?  I know…it’s a little insane…but insane is fun, right?  I knew that you would agree.

Would you like for me to share my treasured recipe?  It’s delish.  It came out of the Rival cook book…that came with my first Crock-Pot.  There I was, a blushing bride of eighteen, with a new Crock Pot. (Be ready for an adventure…my Mr.)

It is not called Dancing Chicken.  The real name is Lemon Herbed Roasted Chicken.  How boring.  Yummy…yet with a boring name.  How sad.  I took care of that.  😉

Dancing Chicken    (Lemon Herbed Roasted Chicken…thank you…folks at Rival.)

3 to 4 lb. fryer or roasting chicken

1/4 c. chopped onion

2 tbsp. butter

Juice of one lemon

1/2 tsp. salt

1 tbsp. fresh parsley (or 1 tsp. dried parsley flakes)

1/4 tsp. thyme

1/4 tsp. paprika

(I add a little garlic salt too.)

Rinse chicken well and pat dry; remove any excess fat.  Place onion in the cavity of the chicken and rub the skin with butter or margarine. (Butter…always REAL butter.)  Place chicken in Crock-Pot.  Squeeze the juice of the lemon over the chicken and sprinkle with remaining seasonings.  Cover and cook on Low setting 8 to 10 hours.

This chicken is so tender, juicy and yummy that it will make you want to slap your momma.  Unless she is the kind that slaps back.  (Ozarkian mothers would slap back…we don’t really slap our moms here.)

Hey Friends!  How is life treatin’ ya?  We are doing good.  We had a wonderful Spring Break.  Just what we all needed.  We had a bit of time away and then we came home and just chilled each day.  WON-DER-FUL!  I also got quite a few DIY things done around here…you know…blogging material for the future. I cannot wait to show you some of the things that we accomplished!   All of that being said…I have a confession to make:

I started out on Spring Break…trying to make good food choices.  I even used the treadmill on the morning that we were leaving.  I’m not sure when the “throw caution to the wind” hit me.  It could have been between raspberry jelly donuts at Krispy Kreme or while I was standing in line at HuHot.  Anyway…now it’s crunch time.  I am back to being good. (Insert frowny face.)

So today…on this mmmMonday! I am going to post a picture that inspires me to eat smart.  When it’s time to get back to being good…I don’t do struggle a tad at first.  I am a veggie kind of girl…but carbs make me feel all warm and cozy inside.  lol!  So…..without further babbling…here is my inspiration.

My secret weapons on salad?  Balsamic vinegar with a drizzle of oil or lemon juice and a drizzle of oil.  I also sprinkle a tad of sea salt and some freshly cracked pepper.  I snack on air popped popcorn.  I don’t eat it dry…I add a sliver of butter to a dab of olive oil and salt of course.  (Not too heavy on the salt…all things in moderation you know.)

I love to eat.  I grew up in a family that associated eating with happiness.  I don’t think that is a bad thing, after all…what do we see in scripture during times of jubilee?  Moderation is the key.  We can do that can’t we?  Of course we can…because we are Dirt Roaders!  We can eat things that are good for us and get up off of our fannies and work!  (Are you inspired yet?  Have I inspired me yet?  I think so.) Okay…we can do this “thang.”  😉 It’s back to being good…and we can handle it.

I hope that you have a wonderful day, Dirt Roaders.  I missed you.  For those of you that are on Instagram…you could probably tell.  I soaked up the time with my family though.  We just enjoyed being together so much.  God is good…to put it in our hearts to enjoy moments with our children.  Far too soon…they are grown.  Okay….now…go forth and make healthy choices!

Hey ya!  How is it going?  It’s Thurrrrrrrrrrrrrrrrrrrrrrrrrsday!  😉 (I know…I know. It says Wednesday at the top…because I’m writing this to you on the night before. 😉 )  Aren’t ya glad.  I thought so.  So…burn…baby burn?  I know….I know.  Strange.  I just thought that I would share my little aloe vera plant with you today.  She is so cute.  She deserves her moment of stardom.

When I was a kid, it seemed like mom always kept an aloe plant around.  When I was seventeen I had an allergic reaction to an antibiotic and wound up with hives.  The only thing that would help, in the middle of the night, was to rub that goop out of the aloe plant on the rash.  If you have never had hives…count your blessings.  I don’t EVER want to go through that again.  So…the aloe, has a special little place in my heart.

About a year or so ago, our pastor’s wife gave me a little aloe vera plant.  I was so excited.  I know, for me, it’s the small things.  It has actually done really well.  She says that they thrive on neglect.  Sounds good to me.  😉

Are you guys good with house plants?  Do they drive you crazy?  Were you a kid during the eighties, so they bring back bad memories of hand-made macrame plant hangers and plants that grow all the way around the room? What was up with that anyway? I think that my granny had one like that. It’s kinda sweet if you think about it.  Who cares if it’s the in thing or not? See if you can get your plant to grow all the way around the room. She is still excellent with house plants.

I hope that your Thursday is excellent, Dirt Roaders.  If you burn yourself…stop by and I will give you a hunk of aloe.  Scratch that…just be safe.  😉

Happy Monday Friends!  I hope that all is well.  We had a wonderful weekend full of treasured little moments.  I love to be quiet and enjoy those.  They fill my emotional tank up with warm fuzzies.  🙂  BUT…we are talking about being good today.  The reason that I say “for now” is because I know that we are human and we love to party.  I always make good, healthy, choices every day of my life. The Christmas season is tough on us in that area…ain’t so?  😉  The goodies are too good bad to resist.

What are we to do? What is being good?  Even at church yesterday…my Sunday school class had a party.  We had doughnuts and cinnamon rolls and biscuits w/apple butter. ( Our town has this new little doughnut shop that is going to be the death of us all…if we aren’t careful.)  Well…this is the thing,  when we aren’t at parties…we can make good choices.  It’s actually not a hard thing.  Don’t eat a block of Velveeta for lunch if you are going to a party that evening.  (So…I don’t always listen to my own advice, not that I eat a block of Velveeta for lunch…that’s just gross.)  Most of the time though, I try to make good choices about what I eat. If I do that during the holiday season, I don’t wind up with scales that cry out in agony on January 2.

One example of being good.  Egg white omelet with roasted red peppers, left-over asparagus, turkey pepperoni and a sprinkle of cheese.  YUM!
